POFADDERBOS SAUVIGNON BLANC 2024

From vineyards on a cool, south-easterly slope in Elim, the Pofadderbos Sauvignon Blanc takes its name from the puff adders often encountered in the surrounding fynbos. These 21-year-old vines grow in almost pure yellow ferricrete soils, producing fruit of remarkable intensity. The combination of Cape Agulhas’ relentless winds and the unique Strandveld terroir ensures slow ripening and exceptional flavour concentration.

The 2024 growing season was marked by extremes — storms and flooding devastated the Agulhas Plain early on, while February brought heatwaves and wildfire threats. Thanks to later pruning, Sauvignon Blanc withstood the season’s challenges, resulting in a truly expressive wine. Fermented cold with selected yeast strains and matured on the lees for six months, this wine captures both the ruggedness and purity of its maritime origin.

Pale yellow with a green tint, the nose reveals gooseberry, tomato leaf, and nettle. The palate is bright and layered with grapefruit, granadilla, and a subtle curd pastry note. A touch of sweet bell pepper adds dimension, leading into a long, crisp finish with salty oyster shell minerality — a hallmark of the cool Elim terroir.

Food pairing: Perfect with oysters, mussels, sushi, goat’s cheese, or fresh asparagus.
Serving: Best served chilled at ±8–10°C.
Cellaring: Drink now for vibrant freshness or cellar until 2028 for added depth.
