Strandveld Adamastor with Curry Fish

When it comes to wine pairing, the key is balance and harmony. The Strandveld Adamastor, with its full-bodied elegance and notes of citrus and fynbos, finds its perfect pair in the aromatic spices of curry fish. This Easter, imagine the burst of flavours as the zesty notes of the wine dance alongside the subtle yet rich spices of the curry. It’s a pairing that speaks of adventures at sea and the comfort of home. Our winemaker Conrad shares his Ouma’s (not so secret anymore) recipe for the best home-made pickled fish. Ouma Betsie’s Pickled Fish Recipe

• 2 large onions sliced
• 325ml grape vinegar
• 350ml water
• 90ml Apricot jam
• 35ml mild curry powder
• 5ml borrie
• A pinch of Whole peppercorns
• 2 bay leaves
• Salt to taste, about 1 1⁄2 teaspoons
• 1 kg firm fish, yellowtail is ideal, cut into medium sized pieces
• Flour for coating and oil for frying

Directions:

  1. Place all the above ingredients into a pot on medium heat and cook for about 5 minutes stirring occasionally until well combined. Sauce can be thickened with flour. Thin with water if the vinegar taste is too strong.
    2. Coat fish with flour and pan fry in oil until cooked. Pack the fish pieces into large sealable container and cover with the sauce.
    3. Refrigerate for at least 3 days before eating.
    4. Serve with hot cross buns for Easter,or buttered bread or bread rolls.

Strandveld Syrah and Hot Cross Buns
